There’s nothing better than pulling warm cookies out of the oven. When my husband and I were dating, his mom made these often in her kitchen, and I became obsessed. When my husband and I got married, I begged her for the recipe so I could keep making them, eventually modifying the recipe with my own tweaks, and now they enjoy it as a healthy snack option for our kiddos. I love sneaking in ground flaxseed for a source of protein, B vitamins, Omega-3’s and magnesium. The kids love now joining me in the kitchen to help me make these after a long day of homeschooling! They love working hard for a yummy reward at the end of the day.
I’ve also made these during times of eating plant-based, so I’ve included some options if you want to make the vegan-friendly version of them.
The Best Oatmeal Chocolate Chip Cookie Recipe
Ingredients
- 1 stick Salted Butter
- 1 large Egg
- 1 dash Vanilla
- 1 dash Baking Soda
- 1 dash Salt
- 1/2 cup Brown Sugar
- 1/4 cup White Sugar
- 3/4 cup Flour
- 1 3/4 cups Oatmeal
- 1/2 cup Chocolate Chips
- 1/2 cup Crumbled Heath Bar
- 1/4 cup Ground Flaxseed
- 1/2 cup Shredded Coconut Flakes
Instructions
- Preheat oven to 375 degrees.
- Mix in eggs, sugar, flour, salt, soda, vanilla, and softened butter. Stir until creamy.
- Add in oatmeal and ground flaxseed, stir until mixed well with previous ingredients.
- Add in chocolate chips, crumbled Heath bar and shredded coconut flakes.
- Drop by tablespoon onto greased cookies sheet.
- Bake for 8 min for chewy, 10 min for more crispy.
